I have moved. Now I live where there are no stairs; but there is an abundance of small peoples hugs.I’ve been here a week, which is why you haven’t heard from me for a while. I had both a Moving Out day and a Moving In day. From an exhaustion point of view it was kind of helpful. I’d like to thank all the lovely people that helped me. Especially my family. Now, you understand that for me ‘Family’ is not just so called blood relatives, some are ‘heart’ relatives. You know who you are. Thankyou. ♥

I have been eating my way through the food stashed in my freezer. I am down to the last few containers…I could be in  for a week of yummy desserts…

I came across a large tub of tomato, onion & garlic, roughly chopped & cooked. It was dated Feb 2011.  I thawed the mix & then pureed to a smooth soup-like appearance, added some chicken stock concentrate & simmered it gently.  I tossed some turkish bread into the oven & when that was crunchy dumped grated cheese onto the soup. It was delicious.

In the summer season I like to cook an assortment of tomato & herbs into chunky blends. I use onion, garlic, and fresh basil. Sometimes Italian herb mixes. During the hot days of summer, when another salad is just beyond reason, it’s great to cook some fresh pasta, and toss the thawed tomato blend over it, add some cheese & you have a delicious meal to share.

I cooked the eggs, but nothing else. Still I did put it together in difficult circumstances, thus showing that challenges do not mean trips to fast food outlets.  I like fruit in my salad, and nuts. How about you?

I picked up a lovely one of these

and some crisp green broccoli. I was thinking I’d make a potato bake but then saw these vegetables so I have decided to combine them all into one au gratin. The left overs will be great for a school lunch tomorrow.

The family BBQ, also on the balcony was a great success, including wonderful weather. 

Right now.

The weather in this season is wonderful. Ideal you may say. I noticed blossoms on the trees & Spring has definitely arrived. If the seasonal rains hold a while longer I for one will be happy.  How about you?

 

The weekend soup is slow-cooking (chicken & sweet corn) and it occurrs to me that I am almost to the end of this soup making season.

When I came to live in Queensland I met a woman (who has turned out to be a cousin) who told me her grandmother always said ‘don’t put your doona away until October’. So I don’t.

I have a house-guest this weekend. She is more like a sister. The weather is beautiful & tomorrow is Riverfire here in Brisbane. I hope you get to make some sweet memories this weekend.
